Kaiseki, or kaiseki-ryōri, is a traditional multi-course Japanese dinner. The term also refers to the collection of skills and techniques that allow the preparation of such meals, and
is analogous to Western haute cuisine.

Carpaccio of Black Hawk Farms beef tenderloin. Capers, Parmesan, black pepper, bourbon smoked sea salt, Distillers Select and red wine glaze with extra virgin olive oil.
Brown rice salad, with roasted tofu, toasted nori, scallion and bell pepper with a Double Oaked miso vinaigrette.
Roasted collar or cheek (fish to be determined) served with lemon and soy
Grilled soy and ginger marinated rack of lamb and plum sauce, served with charred Japanese eggplant and roasted sweet potato.
Japanese milk bread pudding, with miso bourbon butterscotch sauce.
