Legend has it...
In the year 1070 a Shepard in Roquefort, France left a chunk of his cheese in a cave later to discover that it had become
moldy, the Shepard was hungry however and continued to eat it, he soon discovered that it added a new delicious flavor.

In the year 1070 a youth in Roquefort, France was eating a lunch of bread and ewe's milk cheese. He abandoned his meal in a nearby cave after seeing a beautiful girl in the distance. When he returned months later, the mold had transformed his cheese to what we know to be today's blue cheese.
Roquefort is the most famous of all blue cheeses, “The King of the Cheeses, and the Cheese of the Kings.” The only true Roquefort comes from the small area of France, where the Lacaune breed of sheep produce the milk from which it is made. It is said that the limestone caves in which the cheese is aged, is what makes it unique. (Courtesy of www.nomenu.com).
