Serving as Italy's largest maritime trading port for centuries, Veneto and Treviso’s culinary strength is using spices and ingredients that arrived from North Africa and Central Asia, through the Silk Road trading route. Polenta and risotto reign, while pasta takes a backseat. Fish is, of course, a staple of diets on the coast, but as one ventures inland, poultry is more popular.
