• Afternoon (2pm to 5pm)
Pepper Eating Contest ($10 entry; winner gets all entry money)
Will begin at 2:30pm.
Round 1: Each contestant will start out with a Large Cayenne Pepper (Long Hots) (500-2,500 SU). You must eat all but the cap of the Cayenne in order to advance to the next round.
Round 2: The

Red Fresno (4,000-5,500 SU). You must eat all but the cap of the Red Fresno in order to advance to the next round.
Round 3: The Jalapeno (2,500-5,000 SU). You must eat all but the cap of the Jalapeno in order to advance to the next round.
Round 4: The Serrano Chile (5,000-10,000 SU). You must eat all but the cap of the Serrano in order to advance to the next round.
Round 5: The Orange Habanero (100,000-300,000 SU). You must eat the entire chile except the cap in order to finish the contest.
Round 6: The Ghost Pepper (1,041,427 SU). You must eat the entire chile except the cap in order to finish the contest.
If there is not a winner after round 6, the contest will continue with additional Ghost Peppers until the last contestant is standing.
Contestants are disqualified if they cannot perform the instructed actions described above or if they raise their white napkin at the eating table.
Contestants unable to keep the chilies down will be disqualified.
Each contestant is permitted only 1 bottle of water for the contest. No other food or drink is allowed on stage.
o Homemade Ice Cream Contest ($10 entry; winner gets entire entry money)
Check in for contest will be from 2pm to 3pm. Judging will be at 3pm and winners will be announced at 3:45pm.
We are allowing you to bring in pre-made ice cream! Make your favorite batch at home and bring it in to be judged. Must have own storage for keeping it frozen before judging.
Contestants must supply a minimum of one (1) gallon of ice cream.
Upon sign-in, a numbered container will be issued for each contestant sample to be judged. There is a limit of two (2) entries per household.
Ice Cream not used for judging will be served to the general public at no cost between 4pm and 5pm. Contestants will be asked to serve their ice cream to the public at a designated Ice Cream Sampling table.
o Salsa Contest ($10 entry; winner gets entire entry money)
Salsa contest is open to anyone.
All salsa must be homemade and may be either canned or fresh.
All safe food handling and canning processes must be followed.
Contestants must supply a minimum of one (1) pint of salsa.
Upon sign-in, a numbered container will be issued for each contestant sample to be judged. There is a limit of two (2) entries per household.
Salsa will be judged on appearance, taste, and texture.
Entries are to be turned in from 3 pm to 4pm at the Judges Table.
Judging will begin at 4pm and winners announced at 4:45 PM.
Salsa not used for judging will be made available for sampling with the general public between 5pm and 6pm. Contestants will be asked to serve their samples to the public at a designated Salsa Sampling table.
o Gourmet food booths will be available to the general public from 2pm to 5pm in Colonial Hall. Booths will be $15 each.

• Evening (5pm to 10pm)
o Fire Dancing – Side-Fire will perform from 5pm to 6pm in the middle of Franklin Street directly in front of Colonial Hall.
o Texas Craft Beer & Distilled Spirits Tasting
From 5pm to 6:30pm in Colonial Hall on the second floor to limit access.
Feature Balcones Distillery out of Waco (World champion bourbon & whiskey)
Must be over 21 to enter second floor.
Vendors will be free except for samples they provide and will be allowed to sell their product on the premises.
o Gourmet Five Course Dinner
Catfish Haven and Kenny Strickland will cater. Working on the cost and menu presently.
o Sway concert
Begin during dessert course.
Open floor up for dancing.
